The love for all things apple is still going strong around here. Though this time it’s in the form of unsweetened apple chips. After realizing that I had a box of Rice Krispies that needed to be used up and a bag of mini marshmallows that was heading towards staleness, it was decided that rice crispy treats were in order.
Since neither of us had a preference on what flavor to make them, I headed back to the pantry to see what else could be used before going bad. Enter a bag of unsweetened apple chips and an almost empty container of creamy peanut butter.
Since we like the apple peanut butter combination in other desserts and snacks, I figured I would give that flavor combination a chance in rice crispy treats.
We don’t make rice crispy treats very often, so I don’t really have a go-to ratio of marshmallows to butter to peanut butter to crisp rice cereal, etc.
After a few different variations of measurements of the peanut butter, butter, and crisp rice cereal, we finally settled on a recipe that only used one classic 10 ounce bag of mini marshmallows.
I know a lot of people say just use more marshmallows to make them more gooey. However, I don’t want to have to use either more than one bag or part of a larger bag of mini marshmallows.
The remaining marshmallows always end up going stale in my pantry, and the goal here is to avoid food waste. Not create it.
The result is an easy no-bake treat that’s filled with creamy peanut butter, crunchy apple chips, gooey marshmallows, and a hint of cinnamon!
Tips for making Apple Peanut Butter Rice Crispy Treats
- Make sure to use fresh marshmallows. Using dry/stale marshmallows will result in hard rice crispy treats.
- I like to use unsweetened apple chips just to cut down on the overall sweetness. However, if you can’t find unsweetened, sweetened apple chips will work. Just know that it may be on the sweeter side.
- Make sure to use a product that is called apple chips or freeze-dried apples. Plain dried apples do not work well for this recipe. They are too chewy.
- I like to take a few extra apple chips and press them into the top when pressing the mixture into the pan to make them more visually appealing than just brown rice crispy treats. 🙂

Apple Peanut Butter Rice Crispy Treats
These gooey Apple Peanut Butter Rice Crispy Treats are filled with lots of peanut butter, apple chips, and a hint of cinnamon. Great for a last minute snack or dessert, this fun no-bake recipe is a fall twist to traditional rice crispy treats!
Ingredients
- 1/4 Cup butter
- 1 (10 ounce) package mini marshmallows
- 1/2 Cup creamy peanut butter
- 1 teaspoon cinnamon
- 4 1/2 Cups crispy rice cereal
- 1 1/2 Cups apple chips/freeze-dried apples, coarsely crushed
Instructions
- Butter or spray with non-stick cooking spray a 9x13 inch baking dish. Set aside.
- In a large saucepan (I used a 5 quart saucepan), melt butter over low heat. Stir in mini marshmallows until melted. Stir in creamy peanut butter and cinnamon until smooth.
- Remove from heat and add crisp rice cereal and crushed apple chips. Stir until coated.
- Gently press mixture into prepared baking dish. The harder you press the mixture into the pan, the more compact your rice crispy treats will be.
- Allow to cool. Cut into pieces and serve. Store leftovers in a tightly covered container.
Notes
You can use a 9x9 inch baking dish. We just prefer the softer result of using a 9x13 inch baking dish and getting a slightly thinner rice crispy treat.
