These Chewy White Chocolate Raspberry Cookies are an easy cookie recipe filled with creamy, sweet white chocolate and tart freeze-dried raspberries!
Ever have days where you just need a cookie? These cookies will cure that craving. Chewy cookies loaded with raspberries and white chocolate!
The base of these chewy cookies is one of my favorites to mix up with different flavor combinations. It’s versatile and requires minimal dishes and time!
Making these cookies is simple. Cream together your butter and sugars. Beat in the rest of the wet ingredients. Whisk together the dry ingredients and add to the wet ingredients. Stir in the white chocolate chips and freeze-dried raspberries and bake. Easy!
We went with freeze-dried raspberries instead of fresh raspberries, because the freeze-dried raspberries give a more intense flavor than fresh raspberries (especially this time of year in MN!). They also help keep that chewy texture that we like in cookies.
To help even out the tartness of the freeze-dried fruit, we paired the raspberries with sweet, creamy white chocolate chips to create an irresistible cookie!
What makes these cookies even better is that they were made to bring awareness to Cookies For Kids’ Cancer.
I’m excited to participate in this Valentine’s event again. This is the fifth year for our event, and we want to continue to make a difference in the fight against pediatric cancer.
Cancer is the #1 cause of death of children by disease in the U.S. There are 40,000 U.S. children actively battling cancer right now. The National Cancer Institute’s budget for childhood cancer is less than 4%. It’s such a small number, and that’s why I got involved.
With the ongoing pandemic, children are still being diagnosed with cancer. It’s imperative that we raise awareness and continue to raise funds to fund the ongoing pediatric cancer research!

Tips for making Chewy White Chocolate Raspberry Cookies
- For a richer chocolate flavor, swap out the white chocolate chips for dark chocolate chips.
- Can’t find freeze-dried raspberries? Try freeze-dried strawberries instead.
- The centers of the cookies will appear slightly underdone but will set up as they cool.
Chewy White Chocolate Raspberry Cookies
These Chewy White Chocolate Raspberry Cookies are an easy cookie recipe filled with creamy, sweet white chocolate and tart freeze-dried raspberries!
Ingredients
- 1/2 Cup butter, softened
- 2/3 Cup sugar
- 1/4 Cup brown sugar
- 1 Tablespoon milk
- 1 teaspoon vanilla extract
- 1 egg
- 1 1/2 Cups all-purpose flour
- 1 teaspoon cornstarch
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 Cup freeze-dried raspberries, coarsely crushed
- 1/2 Cup white chocolate chips
Instructions
- Preheat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat.
- In the bowl of a stand mixer, or with an electric hand mixer, cream together butter, sugar, and brown sugar. Add in milk, vanilla extract, and egg. Beat until creamy.
- In a medium bowl, whisk together all-purpose flour, cornstarch, baking soda, and salt. Slowly beat dry ingredients into wet ingredients. Beat until combined. Stir in freeze-dried raspberries and white chocolate chips.
- Drop by heaping tablespoon full onto prepared baking sheet. Bake for 10-12 minutes, or until cookies just start to turn light golden brown.
- Remove cookies to a wire rack to cool. Store in an airtight container.

These were delicious, i just added a bit more white chocolate chips and raspberry’s so it needed a little more cook time like 15 minutes
