With all of the baked goods and fall drinks that are available this time of year, it’s easy to find yourself consuming way more fat and sugar than you would normally chose to indulge in.
However, you still want to enjoy those cozy fall flavors!
How about a snack that is both delicious and nutritious and lets you enjoy the craveable flavors of fall?! Enter these Apple Pie Protein Bites!
Almond flour, oat flour, and protein powder are the base for these healthy snack bites and give a good amount of protein and fiber.
For a bit of sweetness, we added some maple syrup. You could also use honey, but we preferred the maple flavor for these.
A cozy, apple pie flavor is achieved by adding in cinnamon, nutmeg, allspice, baked apple chips, and pecans.
The result is a surprisingly simple and super quick recipe for protein bites that are satisfying, wholesome, and not super expensive (No need to go buy premade energy snacks!)!
How to Make Apple Pie Energy Bites
These no bake apple pie protein bites are super easy since your blender or food processor does all of the work!
Start by getting out your food processor or a high-powdered blender.
Add the almond meal/flour, oat flour, vanilla protein powder, cinnamon, nutmeg, and allspice to the blender or food processor.
Blend or pulse for 10-15 seconds, or spices are completely incorporated.
Next, add in the almond butter, maple syrup/honey, and vanilla extract. Blend or pulse until combined and mixture forms a dough.
Because the moisture level can vary so greatly in nut butter, you find may that the dough isn’t really forming.
If the mixture seems a little dry, add additional maple syrup/honey, almond butter, or water, a Tablespoon at a time, until you reach desired moisture level.
Add in the apple chips and pecans, and pulse until just combined.
If you want larger pieces of pecan and apple chip, don’t crush or chop them before adding to the mixture. This will keep them from getting too processed.
Finally, roll the dough into approximate 1-inch balls. You’ll get about 36 bites. This gives you a nice size for a quick couple of bites.
If you want a more substantial protein bite, feel free to shape to whatever size seems best for you.
Store the protein bites in an airtight container.
Tips for Success
- Due to the difference in moisture in nut butters, and even protein powders, you may find that your mixture still seems too “wet” or too “dry” after mixing all of the ingredients together.
- If the mixture doesn’t hold together when pressed, add in almond butter, maple syrup/honey, or water a tablespoon at a time. If the mixture seems too wet, add more oat flour, a tablespoon at a time, until you reach desired consistency.
- The nutrition information will vary based on the type of protein powder used, since protein, sugar, and fat content can vary greatly between brands.
- Make sure that the almond butter is thoroughly mixed before measuring.
- Don’t have oat flour? Add rolled oats to a blender, and pulse until a powdery flour forms.
Optional Add-ins and Substitutions:
- Feel free to use cashew butter or peanut butter in place of the almond butter. Make sure they are thoroughly stirred before use.
- Add in white chocolate chips for some creamy sweetness.
- Swap out the pecans for walnuts or peanuts.

Ingredients
- 1 Cup almond meal/flour
- 1 Cup oat flour*
- 4 Tablespoons vanilla protein powder (try to use one with little to no added sugar)
- 1 teaspoon cinnamon**
- 1/4 teaspoon nutmeg**
- 1/4 teaspoon allspice**
- 1/2 Cup natural almond butter (make sure to thoroughly stir before measuring)
- 4 Tablespoons pure maple syrup or honey
- 1 teaspoon vanilla extract
- 1 Cup coarsely crushed apple chips
- 1/2 Cup coarsely chopped pecans
Instructions
- In a high-powered blender or food processor, combine almond meal, oat flour, vanilla protein powder, cinnamon, nutmeg, and allspice. Blend/pulse for 10-15 seconds to completely incorporate the spices.
- Add in almond butter, maple syrup, and vanilla extract. Blend or pulse until combined and mixture forms a dough. If mixture is too dry, add additional maple syrup, almond butter, or water, a Tablespoon at a time, to reach desired moisture level.
- Form dough into approximate 1 - inch balls. You'll end up with approximately 36 bites.
- Store bites in an airtight container.
Notes
*Don't have oat flour? Simply add rolled oats to a blender, and pulse until a powdery flour forms.
**You can use 1 teaspoon apple pie spice in place of the individual spices.
