I decided to try out these eggs and my new mini-muffin tin on the Mini Cinnamon Cupcakes. Those of you who have been reading my blog for any length of time know that I love cinnamon and that I can’t help but give recipes the healthiest makeover possible without compromising great flavor! 🙂 So, that is what I have done with this recipe! I used half whole wheat pastry flour, half non-fat yogurt, and sugar substitute. You can check out the original recipe here. These cupcakes turned out great. They were moist, light, and loaded with nutmeg and cinnamon spices!
I found that using a tablespoon measuring spoon was the perfect size for filling the mini cupcake liners.
Fun treats for co-workers or kids! These little cupcakes won’t last long! 🙂

- Preheat oven to 350. Place mini cupcake liners in mini muffin tin.
- Combine whole wheat pastry flour, all-purpose flour, baking powder, salt, cinnamon, and nutmeg in a medium-sized bowl. Set aside.
- In the bowl of a stand mixer, add sugar substitute and butter. Beat until creamy. Add in the yogurt and eggs. Scrape sides of bowl and beat until well-mixed. Stir in milk and vanilla alternately with the flour mixture until just combined.
