Strawberry Peach Streusel Bars

These Strawberry Peach Streusel Bars are made up of a rich, buttery crust and streusel topping that sandwich a layer of sweet strawberry peach fruit filling!

Pies are a great way to enjoy all of the fresh produce that is available this time of year.

However, sometimes you just don’t want to go through the work of making a whole pie just to showcase your favorite summer flavors.

Enter pie bars like these Strawberry Peach Streusel Bars!

Making “pie bars” is one of my favorite ways to enjoy the flavors of pie without all of the extra preparation and baking time.

These bars taste just like a fresh strawberry peach streusel pie, just with extra streusel and without the extra work of making a crust!

The buttery oat streusel is just thick enough on the top and bottom to add a nutty richness to the bars, but not too thick that it overpowers the flavors of the fresh fruit.

There is plenty of strawberry peach flavor that still shines through. The filling also has a generous amount of cinnamon and nutmeg with a hint of ginger added in to enhance the flavor even more!

Serve warm with a big scoop of vanilla ice cream for a summer dessert at your next bbq or make a bag lunch more exciting by packing them to go!

How to Make Strawberry Peach Crumb Bars

In a large bowl, gently stir together the strawberries, peaches, sugar, corn starch, cinnamon, nutmeg, and ginger. Set aside for later.

Preheat your oven to 350 degrees Fahrenheit. Line an 8×8 inch baking dish with parchment paper or spray with non-stick cooking spray. Don’t skip this step!

In a separate large bowl, whisk together the all-purpose flour, quick cooking oats, brown sugar, baking soda and salt. 

Cut in softened butter until the mixture resembles coarse crumbs.

Press 1/2 to 2/3 of the crumb mixture into the bottom of your prepared baking dish.

Using a slotted spoon, or one with holes in it, scoop the strawberry peach mixture out of the bowl and into the baking dish. You want to make sure to let the juices drain to prevent the bars from getting soggy.

Sprinkle remaining crumb mixture over the top of the fruit.

Bake for 28-30 minutes, or until the streusel topping turns golden brown and the filling is bubbling.

Remove to a wire rack to cool.

Prepare confectioner’s sugar drizzle. In a small bowl, whisk together confectioner’s sugar and 1 tablespoon of milk. Add additional milk as needed to reach desired drizzling consistency.

Allow the drizzle to harden before cutting into bars and serving.

The leftover streusel bars will remain the freshest if they are stored in an airtight container in the refrigerator.

Tips for Making Strawberry Peach Streusel Bars

  • I know it dirties another utensil, but scooping the fruit out with a slotted spoon helps keep the excess liquid out of the bars. This keeps the base of the bars from getting soggy.
  • Try to use peaches and strawberries that are sweet and flavorful. If your fruit doesn’t have any flavor, the bars will be lacking in flavor as well.
  • You can leave off the confectioner’s sugar drizzle, and the bars will still taste great.

Ingredients

For the Filling

  • 1 1/2 Cups strawberries, hulled and sliced
  • 1 1/4 Cups peaches, sliced
  • 1/4 Cup sugar
  • 1 Tablespoon corn starch
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon ginger

For the Base and Topping

  • 3/4 Cup all-purpose flour
  • 3/4 Cup quick oats
  • 1/2 Cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 Cup butter, softened

For the Drizzle

  • 1/2 Cup confectioner's sugar
  • 1-2 Tablespoons milk

Instructions

  1. In a large bowl, gently stir together strawberries, peaches, sugar, cornstarch, cinnamon, nutmeg, and ginger. Set aside.
  2. Preheat oven to 350 degrees Fahrenheit. Line an 8x8 inch baking dish with parchment paper or spray with non-stick cooking spray.
  3. Whisk together flour, oats, brown sugar, baking soda, and salt in a large bowl. Cut in butter until mixture resembles coarse crumbs.
  4. Press 1/2 - 2/3 of crumb mixture into the bottom of prepared baking pan.
  5. Spread fruit mixture over the top. Sprinkle remaining crumb mixture over the top of fruit.
  6. Bake for 28-30 minutes or until streusel just begins to turn golden brown.
  7. Remove to a wire rack to cool.
  8. Prepare drizzle by whisking together confectioner's sugar and 1 Tablespoon milk. Add additional milk as necessary to reach desired drizzling consistency.
  9. Allow glaze to harden before cutting into bars and serving.
  10. These bars will stay the freshest longest if they are store tightly covered in the refrigerator.

I just made these for the second time. They are delicious! And super easy to make. I got the sweetest end-of-the-summer peaches and strawberries, and though I just wanted to eat them immediately, I remembered how flavorful this recipe was, and made the nice fruit last a bit longer.
